What would the process be to get my parents their green card?

If both your parents came in with visas or were inspected upon their entry, you can petition (I-130) for them and they can apply for adjustment of status (I-485) simultaneously. You will need to provide copies of their entry documents to prove that they came into the country legally.

Is it possible for my family to apply for any kind of visa so they can come to the US?

Unfortunately, only your spouse and children can accompany you on H-4 visa as your dependents when you come to the U.S. on an H-1B visa. As for your parents and brother, they can try and get a visitor visa, but that is of fairly short duration, so they wouldn't be able to stay with you for the duration of your H-1B status.

Can I file for a fiance visa for my wife who is in Poland at the moment and we also got married in Poland?

Because you are already married in Poland, you cannot petition for her as your fiancee. The priority date for spouses of lawful permanent residents is current, so there is no wait time as of right now. You can petition for her now on form I-130, and she should be able to come to the US within 12 months as long as the priority date or the waiting list does not change.
