Hello. Since you filed the I-485, he must wait for the interview. The processing time will depend on your city/district. However, since you file the I-485, he is legally in the US based on that pending application. His visa expiration date is irrelevant now.  Also, he cannot be approved if he leaves the US, unless he also filed and received his I-131, Advance Parole document.    Good Luck and happy new year.

It's always faster nowadays if the person being sponsored lives in the USA. If you are married to a USA citizen and waiting outside the USA, it could take 6-18 months until you actually get the immigrant visa.

It depends who is who and how old is the child. Most likely: no, as the wait time for sons and daughters (over 21) for any category is much longer than B status allows to stay in the US.
