Could I sue my employer if all this time I been breathing carbon monoxide the doctors told me that night I almost didn't make it?

Usually an employee is limited to worker's compensation when pursuing claims for work-related injuries against their employer. A tort (personal injury) claim can generally only be pursued if the employer's actions were such that he knew or should have known you would have gotten injured. Examples would be if he intentionally hurt you or if he knew your truck was leaking carbon monoxide into the cab and that it was likely to make you sick.

Can we file a personal injury lawsuit for wrongful death years later?

The time period in Washington is three years. If the insurer paid the limits you would have signed a release, which would preclude another claim.
