Significantly more information is needed in order to answer your question, including such things as where are your wife and son located, are consular processing or Adjustment of Status applications pending, and if so, when were they commenced? Especially if you have not yet commenced consular processing or Adjustment of Status, it would be wise to work with an immigration attorney - mistakes in preparing the application packages or failure to fully document them, can lead to significant delays or even more harsh consequences.

In a naturalization application, the failure of the applicant's spouse to file tax returns should be irrelevant. If the Permanent Resident has filed tax returns as "Head of Household," however, there can be serious complications, since that generally is available only to people who are not married. It would be wise to obtain a professional opinion about the appropriateness of your filing as Head of Household - if it was lawful, then you should plan to provide evidence of its lawfulness in the naturalization application process; if it was not lawful, then you should speak to a tax professional about filing an amendment to your returns prior to commencing the naturalization application process.

If you do not have any income, you need assets (including the money in the bank) with a total value in excess of 5 times the federal poverty guideline. If you live alone now, the poverty guideline for you+your mother is $19,912; so you need to have assets valued in excess of $99,560. Your mother's assets can be counted, but, as a practical matter, it might be difficult to obtain in Egypt a valuation of her jewelry that the embassy would believe. A possible way to obtain such valuation is to insure the jewelry through AIG or Lloyds Insurance (it would also make your mother's travel a little more secure).
