You can file a motion for new trial within 30 days after the final orders are signed. After that it is very difficult to set aside orders. I suggest you hire a lawyer.

From the very few facts you have given, it does not appear that what she wants now was part of the agreement. Without reading the relevant documents, I cannot say for sure, but it appears that the answer to your question would be no.

Would a divorce take place with just an uncontested divorce document when we take it to court?

"Uncontested" means that there is an agreement between the parties and, therefore, nothing for a judge to decide except to approve the Agreement. Depending on exactly what that agreement says, a judge will almost always approve it. The exception is where it appears to the judge that one party is not voluntarily or knowingly agreeing to something.
