Can my ex remove my things from my apartment that we shared and put them in storage without my consent?

Clearly she can do this, as she has done it. If you are married to her, you need to get a divorce on file. If you were not married to her, you need to demand the return of your personal property within a reasonable time (set a deadline that is reasonable) or you will report the property as stolen. If you were not married, then she has actually stolen your stuff unless she can argue that you gave it to her (or loaned it to her).

What are the required documents for divorce?

It depends if there are children involved. If no children, you must file a complaint for divorce. Assuming it is amicable, then you could file a stipulated judgment of divorce. If there are children, then you will need a parenting plan and custody schedule. If there is property, there should be a statement in the judgment that the property will be divided per an attached schedule or that the property has been divided and there are no issues. Those are the minimum documents. However, it is always a good idea to get an attorney involved to make sure that you don't miss anything.

In a divorce, would I get half of the house?

You should consult with an experienced family law attorney in your area to review these issue. In Arizona, based upon your explanation of the facts, generally speaking the court would treat this house as community property, and if you cannot reach agreement as to value or division of the property, then would order it to be sold and the proceeds divided.
