The best thing may be for your spouse to get an attorney in the divorce to assure that everything is done knowingly. You (or your spouse's family members) might also need to enlist the help of a guardianship lawyer, who can move to get an adult guardianship over your spouse and then help direct the progress of the divorce on your spouse's behalf.
