The answer to your question involves a lot of research and investigation. Even if the airbags didn't activate, that doesn't necessarily mean the car company is liable. Even assuming the airbags were defective, you have to do several things very quickly to gather evidence for a lawsuit. You need to hire an attorney now, so your attorney can investigate. Your attorney will need to hire one or more experts, arrange to examine the car in great detail, and get the expert's opinion that the airbags were defective. Also, even if the airbags were defective, the nature of the crashthe car rolled over, etc. may make it hard or impossible to prove that your damages were caused by that failure. In other words, if you can't prove that if the airbags had worked you wouldn't have been hurt, you still lose your case. In any case, you cannot know what to do until you get a lawyer.

I don't think you have a viable claim for additional damages. It would cost more than the likely recovery. Imagine yourself in a courtroom with other adults asking them for money. How much would you ask them to make the other guy pay? $1,000, $2,000. The only liable party is the dog owner. All in all, you fared better than most dog bite victims.

The bottom line is, they will use those questions and answers to make a decision as to whether to pay you anything, and if so, how much. You never know how a claims adjuster is going to handle the interview, whether that person is skilled, inexperienced, well-trained, argumentative, it could go well or badly. This is why you need to retain a lawyer, who can personally guide you through the process.
