Your affidavit of support (Form I-864) was considered on the first stage of the the process; it is not likely to receive much attention on the next stage. When you will file for removal of conditions on your wife's residence, the main question will be whether your marriage is real. It has nothing to do with your loss of job, which can happen to anyone. Of course, you will feel more confident if you find a new employment before going to the second interview, but, if you won't, it should not be a reason for a denial of your wife's permanent residence. And, by the way, there is nothing wrong with showing your unemployment benefits as income.
