You probably meant your employer mailed a request to USCIS to withdraw the approved I-140. If USCIS approved your I-485 before it could act upon the request, you have a good case if later USCIS starts to rescind your green card. definitely consult with an immigration lawyer to help you if that happens.

You will need to submit an I-130 petition for him, and he will need to return to the Philippines and wait for his priority date to become current before he can apply for an immigrant visa or adjustment of status. It's currently taking about 11 years for unmarried sons of permanent residents from the Philippines.

Unfortunately U.S.C.I.S. does not allow the cancellation of a student's current OPT unless it is notified of the wish to cancel prior to the OPT going into effect. From your question, it appears that the OPT has already gone into effect. If you do not work according to the OPT grant, you will be considered out of status if the time without work is more than 90 days.
