Assuming you are in California, usually everything relating to sentencing has to be finished before probation ends. If the facts are, as you have related, the court has no jurisdiction over you if probation has ended, you may have a new problem depending on how you ended up in "detox" but if you have completed probation then you can't have a problem with the earlier case.

That depends. Yes, your attorney can postpone a trial until later, even if you don't want to postpone it. However, an attorney cannot force you to take a plea or deny you the opportunity to eventually have your day in court.
