Basically, you can not have an agreement about a child, until the child actually exists. Such an agreement may not be valid anywhere. Go see a family lawyer about these things.

My question is: If I file for divorce, can my husband fight for the UTMA accounts that I have worked so hard to build for our son's future?

If you have not filed for divorce yet, I would go ahead and transfer the UTMA savings accounts into your sons name, he is 21 years old, no longer a minor under the law, and can handle his own money. It is your sons money anyway and there are other savings and investment vehicles that can "earn money" other than a UTMA account.  If you keep the money it can become an issue in a divorce, I had a case where the husband actually drained all the money out of a UTMA account and used it to pay for his own lawyer. The parties fought over everything including who would control the childrens accounts.  The child will not be a party to the divorce since he is over 18 years old.
