As an international student, how do I handle my unsecured debt after I've been out of the country for a while?

You can always settle. Call the bank and tell them that you do not want to litigate. You want to pay them a fair amount. Settle the case.

How do I get my name off of a student loan as a cosigner?

You cannot get your name removed. You were added in case something like this happened. Co-signing means that if the other person does not pay you guarantee to be responsible. If they come after you, you will have to sue the student.

If we file for bankruptcy and leave the country, do I have to repay the loan? How does the repayment work?

If you have a discharge in bankruptcy (chapter 7) on the loan (assuming they are dischargeable debts) the creditors cannot continue collection. Your children would not be affected at all now or in the future except if you need student aid for them.
