What can I do if I squeezed a person’s cheek saying how cute they were and they threw themselves on the floor and said they got hurt?

Technically, if you squeezed someone's cheek, and they did not like it, it could be considered an "offensive" touching which is battery. Assault would be if they were frightened by your conduct so that they were in fear of bodily harm. If a district attorney presses on with the matter and brings you to court you should talk to an attorney to delve more into the facts, such as if there was animosity between the two of you before the cheek squeezing, why you did it, were there witnesses, if you were being sarcastic in any way.

Do I have a case if a tape was put on me that I was allergic to on surgery, spent night in ICU and had additional expense due to their error?

Yes, write a nice demand letter to the head of the hospital, tell them how much you want and how paying you would help them avoid looking stupid in the area's newspapers.

How can I protect my son from unfairness by his 3rd grade teacher?

Write down as exactly as possible what occurred among you, the principal and teacher. State the date, time and location of the meeting. Produce a typewritten (e.g. computer) version of your account. Don't do it in narrative form. State each point separately and number them. Have some competent person you know go over your statement with you. State that you consider this to be actionable harassment by the school district. The word "actionable" means you think you have a case in court. If anything is actionable the district would be liable. With this you are showing some force and putting everything on the record to "box in" the principal. Be sure to get a signed acknowledgement of receipt from the receptionist.
