The process for bringing someone here as your fiance or spouse is complicated and involves lots of supporting documents from China and the US.  The instructions for each form tell you what documents you will need to include with the application or petition.  Of course, you can also hire someone to processing everything for you and they will then tell you what documents you need for each stage of the process.

For a citizenship interview, original documents that you should have are all your passports since getting the green card, any other travel documents, green card, and any documents of marriage, divorce, and children born since you received your permanent residence. Most American consular officers are realistic and they know that the sibling category takes approximately 12 years, and family members may wish to visit the US during those years. In most cases where the visa applicant is able to show sufficient ties to the home country, consular officers will issue visiting visas.
