Your wife can file the I-130 petition at the same time you file the I-485 application. The date on your I-20 will not matter.

If your husband already in the US, I suggest he files for AOS. If he returns to his home country he will need to file for an Immigrant visa.

If you are a US citizen, you can file an I-130 visa petition for your husband. If you are not married yet, you can file an I-129F petition for a fiance. In either case, he will need to apply for the visa at the US Embassy in Mexico after the petition is approved. If you want the process to be completed quickly, you should hire an immigration attorney.
