Generally, taxes and debts are paid by the estate as a whole. It sounds like the decedent made specific bequests to certain people. Those bequest get taken care of first. If you got the residuary estate, you get what is left after all of those payments. You didn't pay the taxes, the estate did.

Title needs to be reviewed ASAP. Get an attorney. If you have proof the home was left to you (the deed even though unrecorded), bring it forward NOW. Don't waste ANY time or it will be an expensive mess.

Does property still need to be probated from father's death, is that document legal (no quitclaim) and how does Inheritance work in this situation?

It is possible, if not probable, that your wife signed away her rights under the agreement and release. If she had not done so, she would have been entitled to a 1/2 interest in the property. Her parents were owners by tenants in common, meaning that upon the death of either one of them, the deceased's share would have had to go through probate. Being that your wife appears to have signed away her rights, there may be nothing left for her to pursue. You should have an attorney review the document she signed. (Ideally, this would have been done before she signed them.) There may be nothing left that she can do.
