That is really up to the judge. Your lawyer should object to a request for a continuance if an arresting officer does not show up for trial. However, almost every judge will give at least one opportunity to either side, prosecution or defense, to continue a case. After one continuance then it gets dicey. A 2nd request may be allowed but it must be a pretty good reason and your attorney should certainly object and request a dismissal.

I don't recognize the term "extreme DUI" as having a specific legal meaning in Texas, but if there was no accident and excessive speed is the only issue, maybe no jail time. Plus, if you'll make sure this is your ONLY offense (and specifically your only alcohol offense, you can eventually get it expunged from your record under a not-too-well-known provision of the Texas Alcoholic Beverages Code.

It is not unusual for a company to let someone go as a result of a DUI conviction especially where one of the job requirements is driving as this potentially creates a huge liability for the company. Sorry that you lost your job.
