As a DUI attorney I can't answer this specifically, I notice this was also posted on an employment law forum, they will have the better legal answer. The nature of your job, job requirements and whether you have a contract will determine whether or not you have to provide the requested information. If you are an "at-will" employee I think you don't have to provide the information, however your employer may choose to terminate you too.

Will an out of state probation officer find out about a drunk in public?

You should hire an attorney to handle the out-of-state ticket immediately. It's possible that your probation officer won't find out about the out-of-state ticket if you get it reduced to a lesser offense. But if you just plead guilty to the out-of-state ticket, the conviction of "Drunk in Public" will be reported on your criminal record and your probation officer will see it. It's up to you, but in general it's always best to tell your probation officer about violations before they find out about it on their own.

The short answer is that you cannot get it expunged.  Expunction is a limited remedy found in the Texas Code of Criminal Procedure 55.01.  You were placed on probation and you entered a guilty plea. Unfortunately, your conviction will not fall into one of the limited categories for which expunction is allowed.
