It depends on the document and whether it is legal. An employer can change the terms of an at-will employee's employment if it provides notice to the employee of the change. This would include requiring current employees to sign an arbitration agreement, for example. From your question, I cannot tell whether your employer is making a policy change that you disagree with or whether it is asking you to sign a document that is untrue or that you believe violates the law.
